Read your recipe carefully. Determine the steps involved in preparing the recipe. Remember to include mise en place, time for the dough to rest, preheating the oven, filling your sink, etc. List each step in the order it is to be completed.
NEXT, determine a method for completing all the steps in the time available. Estimate how many minutes you should allow for each step. If you will need two days, be sure you have marked what you will do each day. Which steps can be dove-tailed? Estimate when you should serve the food product in time to clean up. The cooking or baking times and preparation steps need to be calculated bakcward from the serving time.
